Turkey Bibimbap

(Serves 4)

Ingredients….

Turkey mince

1 tsp tamari sauce

1 inch ginger root, grated

2 closed garlic, grated

1 courgette, finely julienned

½ Butternut squash, finely julienned

2 spring onions, finely julienned

1 red pepper, finely sliced

1 handful coriander

4 hen eggs

Coconut oil to fry

1 tbsp chilli paste

1 tbsp sesame oil

1 tbsp tamari sauce

1 tbsp toasted sesame seeds

Method….

Marinade the turkey mince for 2 hours in the soya, ginger and garlic.

Mix together chilli paste, sesame oil, soya sauce and toasted sesame seeds. Set aside.

Fry the mince in a little coconut oil until golden and cooked through, mix with a wooden spoon to breakdown the mince a bit, then set aside.

When ready to serve fry the eggs.

Serve the raw vegetables in little plies on a bed of turkey mince, spoon the sauce over and top with a fried egg and a few coriander leaves.

You can either enjoy with a portion of brown rice in the bottom of the bowl or substitute for cauliflower rice instead.
